Recipe: Jungle Bird

Summer is a time for tiki, and the Jungle Bird is one tiki cocktail that’s made a comeback in recent years. Why? Because it’s got a healthy dose of bitter Campari to give it a balance that you don’t often find in this kind of cocktail. The dosage on the Campari is totally flexible. Start with a little and add to taste, or serve a shot on the side for your guest to mix in as desired.

Jungle Bird
1 1/2 oz Jamaican rum (the darker the better)
1 1/2 oz pineapple juice
1/2 oz lime juice
1/2 oz simple syrup
3/4 oz Campari (or to taste)

Shake all ingredients with ice, strain and serve in an Old Fashioned glass over fresh ice. Garnish with a lime wedge and/or pineapple slice.
