Earlier this summer, we covered Writers’ Tears Cask Strength, a limited edition offering from Walsh Whiskey. Now we’re back with another cask strength limited release from Walsh Whiskey’s other moniker, The Irishman. The brand first launched this whiskey way back in 2008, and at the time, it was the first release of a triple-distilled Irish whiskey at cask strength to arrive in over fifty years. Safe to say, with the explosion in Irish whiskey over the last decade this bottle has plenty of company now. Like the Writers’ Tears release, this is a non-age-stated marriage of single malt and single pot still whiskey bottled at cask strength and without chill filtration. Thoughts follow.

The aroma is gentle but expressive with exotic wood, green apple, and soft spices. A bit of ginger root arrives as it opens in the glass, alongside almond cookie and nougatine. The palate is plush and impressively approachable at cask strength. A rich, malty body offers up more orchard fruits – nectarine and tinned pears – before a cascade of baking spice, pecan pralines, and chocolate sauce arrives. It threatens to become almost too sweet, but the spice builds as it heads into the finish, curbing some of that decadence before a lingering, warming finish of candied apple and lemon cream pie arrives. An indulgent Irish whiskey.
