Previously we brought you coverage of One Stone’s Central Coast Rose — the winery an offshoot of Ancient Peaks — and now we turn to heartier fare, a 2021 cabernet from the Paso Robles appellation.
Bold without being aggressive, particularly on the tannin front, this is one of the more approachable and recommendable budget cabs you’ll find on the market. More cherry than currant, with overtones of rhubarb, clove, and some dark chocolate, the wine has a slightly green quality that complements the dark fruit notes more than you’d expect, letting some brooding, earthy qualities linger as the finish develops. Tannins do appear on the conclusion, but they integrate well into what is that surprisingly powerful experience from start to end. Great value.
